Crystal Apple Award!

The Crystal Apple Award at East Meadows Elementary this year goes to first-grade teacher, Lori Kofoed.  Lori is married and the mother of five children and grandmother of two. She earned her degree from Brigham Young University.  Prior to coming to East Meadows Elementary she taught second-grade at Sego Lily Elementary in Lehi, Utah and second- grade at Scera Park Elementary in Orem.  Lori chose to be a teacher because she loves kids and loves teaching.  We asked her what she likes about her job she replied, “Definitely the kids and working with a great staff.”  Lori’s hope for her students this year would be to have a positive learning environment where they can grow and expand their knowledge.  Congratulations Lori on receiving this award.  Shannon Hales and Jennifer Jolley wrote a poem about Mrs. Kofoed.  This sums up what a great teacher and asset she is to East Meadows Elementary.

Mrs. Kofoed has a special gift, and a heart that deeply cares,

She adds a lot of love, to everything she shares.

Although she deals with temper tantrums, and challenges hard to beat,

She handles them with patience, because she is so sweet.

She spends a lot of time, at weird hours in the night,

Finding great ideas to share, on every teacher site.

First grade knows that her husband, Val, must be the best,

Because he and their printer, never get their rest.

Her contract seems to last, hours into the night,

She makes sure that her lessons, and classroom are just right.

Lori is an amazing friend, working with her is a dream,

She gives and helps and shares and loves, she is essential to our team.

Her students are important to her, it shows in all she’s done,

She pours her heart and soul, into EVERY SINGLE ONE.
